Afghanistan

125 ml (½ cup) canola oil

1.5 kg chicken, cut into small pieces on the bone

1 tbsp finely chopped ginger

1 tbsp finely chopped garlic

1 brown onion, finely chopped

260 g (1 cup) thick Greek-style yoghurt
-
2 tsp ground turmeric
-
1 tsp salt
-
1/3cup chana dal, soaked in cold water for 2-3 hours

10 dried sour plums, soaked in cold water for 1 hour

2 tomatoes, diced
-
4 green chillies, thinly sliced
-
3 long fresh red chillies, thinly sliced

Thinly sliced red onion rings

Lime wedges
-
Coriander sprigs

Afghan Korma
Preparation:
To start cooking the recipe you must heat the oil in a frying pan over high heat., while you cook the chicken pieces for 8 minutes, or until golden on all sides, then remove from pan and set aside.
Following the steps of the recipe you must Add the ginger and garlic to pan and then you must stir for 1–2 minutes. Add the onion and cook for 6–7 minutes, or until you see golden.Now Reduce the heat to low, then you must add the yoghurt, turmeric and salt. in this moment is important that you stir well, bring to a gentle boil, then return chicken to the pan.Now Cover and simmer for 6–8 minutes. Drain the chana dal and dried plums, add to the pan and simmer for another 2–3 minutes. then add the tomato and chilli and cook for 10 minutes, or until dahl is soft, sauce is thickened and oil has risen to the surface.
And finally you will serve with red onion rings, lime wedges, coriander sprigs and Afghan bread.
Ready!! now you can serve at a family dinner or family events, as they do in afghanistan, because they tend to make nightly dinners at differents days of the week.

Kasha –Simenukha
Ingredients:

Preparation:
This exotic preparation is one of the most important plate in Afhganistan.
The main ingredients is a mix of beans. Those beans can people change for another tipe. The mix of beans should be boiled. On the other hand, onions and mushroom should be sauté, minimum for 5 minutes. This step is very importan because it gives flavor to the preparation. The last step, is very easy you only need to put all the ingredients inside a frying pan with a little beat of oil and black sausage. As you can see this plate is very easy and also delicious, because de mixes of the flavors are a perfect combination.

Ingredients:

4 oz pitted prunes

4 oz grape
-
8 oz fresh or dried apples cut

4 oz dried pitted cherries
-
8 oz dried pears
-
1 cup honey
-
2 sticks of cinnamon
-
6 aromatic Nails
-
2 L of cider
-
Juice of a lemon
Preparation:
Combine the fruit in a saucepan and fill with enough cider to cover the fruit and cider 1/3 more. Dried fruits absorb much water. Add cloves and lemon peel. Simmer until the fruit pieces do not break. Collect and separate the liquid from the fruit. The liquid put into a saucepan and cook until reduced by 1/3. Add honey, cinnamon, lemon juice and fruit. Reheat stirring constantly, test, add more lemon juice if needed. It should not be cloyingly sweet, fruity must master. Serve hot. Hang in the refrigerator up to two weeks.
